Adventures with our CSA box

Since moving we have gotten involved with Community Supported Agriculture.  For a small fee we have a box of fresh, local (organic) fruits and vegetables delivered to our door.  It has been fun because it has encouraged us to try things beyond our standard of peas and carrots.  For example, we discovered that our children like beets, I really don't think I would have ever thought to try them if 5 of them hadn't happen to show up in our box one week. They happily munched on beets to get out of eating lettuce anyway. :)

Here is a salad made from Romaine lettuce spinach, beet greens, dinosaur kale, carrots, beets, pecans, apples, and a little feta cheese.  We added the apples, pecans and cheese, the rest came from our box this week.
And here we made some "Dinosaur (kale) chips.  Not sure why it's called Dinosaur Kale, but my boys are more excited to eat it that way.  To make the chips, I cut the leaves from the spine, chopped, tossed with a little olive oil and Morton's Natures Seasons (instead of salt a pepper, of course) placed on a cookie sheet in a 325 oven for 15 minutes.
   We shall see what new things we get to try next week.
