Apple Bread with Crumble Top

This recipe comes from an old Penzeys' Spices catalog.   It is a wonderful use of those "questionable" apples your sweet children picked all on their own. It is very easy to make and tastes wonderful. 

Bread:
4 c apples peeled cored and chopped
4 large eggs
1 c vegetable oil
2 tsp vanilla extract
2 tsp baking soda
2 tsp salt
2 tsp cinnamon
3 c flour
2 c white sugar

topping:
3/4 c flour
1/4 c white sugar
2 tsp cinnamon

1/2 c (stick) butter softened.

Directions:
Preheat oven to 350 and lightly grease two loaf pans
Peel, core and chop apples, set aside
In large bowl beat eggs till fluffy.  Add the oil and beat until combined
Add vanilla, baking soda, salt and cinnamon and beat until thoroughly mixed
Then and flour and sugar and mix on high until smooth.  Batter will be very thick.
Fold in apples.
Divide mixture between two pans.
To prepare topping mix together flour, sugar and cinnamon.  Cut in butter and mix with hands until crumbly.
Sprinkle equal amounts over the two pans.
Bake for 1 hour on center rack in oven.  The loaf should be firm when touched in the middle.
Remove from oven and place on cooling rack.  Let sit 5 minuted before removing from pans
