Cranberry-Orange Chicken bake


This is from Kraftfoods.com and is a variation of the chicken and stuffing bake, the big change is adding cranberries, walnuts and orange juice to the stuffing mix. This gives the dish a sweet flavor and its kind of like Thanksgiving all in one pan! :-) I liked it, my boys ate it...and its easy and can be thrown together in minutes, what other recommendations do you need? :-)

Cranberry-Orange Chicken Bake
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup orange juice
1/2 cup water
1/3 cup dried cranberries
2 Tbsp. chopped Pecans
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 can (10-3/4 oz.) condensed cream of chicken soup
2 cups frozen mixed vegetables, thawed, drained



HEAT oven to 400ºF.
PREPARE stuffing as directed on package, using orange juice and water for the liquid and stirring in berries and nuts with the stuffing mix.
COMBINE chicken, soup and vegetables. Spoon into 6 ovenproof serving bowls or 13x9-inch baking dish; top with stuffing mixture.
BAKE 30 min. or until chicken is done
