Cashew Chicken


Cashew Chicken (a variation of a Rachael Ray recipe)
Jasmine or Basmati rice

1 lb boneless, skinless chicken breast, diced, combine in bowl with:
1 Tbsp sesame oil
2 cloves garlic minced
2 Tbsp rice wine, rice vinegar or dry sherry
Some crushed rd pepper flakes
Pepper
(set aside)

1 Tbsp sesame oil
1 large carrot diced
1 red pepper, diced
1 7oz can sliced water chestnuts, drained and coarsely chopped
3 heaping Tbsp Hoisin sauce
A few handfuls cashews

Start rice and chicken
Heat oil in large wok or skillet over high heat until it smokes. Add carrot and stir fry for 2-3 minutes. Add coated chicken and cook another 3-4 minutes. Toss in bell pepper and chestnuts. Heat through for 1 minute. Add housing and toss to coat evenly. Dump chicken over bed of rice and top with cashews.

This meal comes together super fast. You can cook it all in the time it takes to make the rice, and doubles easily if you need to feed a crowd. It is great when you need to throw something together fast. You can get creative with your veggie options too. As you can see, I didn't have water chestnuts this time (which I like in this dish, it adds a nice texture) so I substituted fresh broccoli, which oddly enough, my children LOVED and fought over! They really like this dish because it has things they love alone, carrots, red pepper, chicken, nuts... Give it a try and let me know what you think. This is a family favorite!
