
Indian Chicken
total cook time, 25 minutes
rice
1.5 lbs Chicken breast diced
1 tbsp canola oil
1 small onion diced
2 cloves garlic minced
2 tbsp curry powder
1 tsp ground Ginger
1 cauliflower cut into florets
1 13.5 oz coconut milk
1/2 c chicken broth or water
Salt and pepper
start rice
Season chicken with salt and pepper. Heat oil in large skillet over med-high heat; add chicken and cooked until lightly browned, about 5 min. Remove chicken from pan.
Reduce heat to medium-low. Add onion garlic curry powder and Ginger to same skillet. Cook until fragrant about 2 min. Add cauliflower coconut milk and broth cover and simmer, stirring occasionally, until vegetables are crisp-tender, about 5 minutes. Add chicken back to pan and cook until sauce is thickened and reduced, about 5 minutes. Serve hot.
This is another one of those great meals that comes together in less time than it takes to make the rice. I was pleasantly surprised by how easy it was, and how great it tasted! We use Jasmine or Basmanti rice in our house (no Uncle Ben's!) because it has a nice nutty flavor, and smells like popcorn when cooking...YUM! I hope you give it a try, it really turns out great! (and I'm not even a huge cauliflower fan!!!!!!) ;-)
