Cranberry soda bread w lime glaze
1 1/3 c plus 1 Tbsp milk
1 tbsp fresh lemon juice
4 c flour
1 1/2 tsp baking soda
1 tsp salt
3 Tbsp unsalted butter, chilled and cut into cubes
1 c dried cranberries
1 egg
1 c confectioners sugar
Grated peel and juice of one lime
Preheat oven to 425. Line baking sheet with parchment paper. In medium bowl whisk together 1 1/3 c milk and lemon juice; let sit at room temp 10 minutes
Meanwhile in a large bowl combine flour baking soda and salt. Rub in the butter until coarse crumbs for about 3 minutes stir in cranberries.
Beat the egg into the milk mixture; stir onto flour
Mixture until just combines. Transfer the dough to a lightly floured surface and knead until of just comes together; form into a 8-inch round and place on baking sheet. Using a knife score a 1/2 inch deep x into the round. Bake until dark golden and crusty 25-30 minutes. Transfer to rack to cool completely.
Meanwhile, in medium bowl combine confectioners sugar, lime peel, lime juice and remaining 1 Tbsp mill. Drizzle the cooled soda bread with the lime glaze.

I typed this into my iphone, so sorry for any typos. I got this recipe out of this months "Everyday with Rachael Ray" magazine. We made it right away, and it was gone by the next day. Super yummy!!!!
