There are lots of great cornbread recipes out there, and I use a few of them, I like this one best though, because its so easy, its almost easier than the packaged stuff they sell in the store. You can just throw it together in a few minutes and have a nice warm side dish.
1 c milk
1/4c butter melted
1 large egg
1/14 c corn meal
1 c flour
1/2 c sugar
1 Tbsp baking powder
1/2 tsp salt
Heat oven to 400 and grease 8x8 baking dish (or cast iron skillet)
Beat milk, butter, and egg in large bowl. Stir in remaining ingredients all at once until flour is just moistened (but still lumpy). Pour batter into pan. Bake 20-25 minutes or until golden brown and toothpick inserted into center comes out clean.
