"Air Cookies"

There is probably a real, fancy name for these cookies, but we always called them air cookies growing up, so I'm sticking to it.  They are easy to make once you know how to whip up egg whites to stiff peaks.  (Hint: use older eggs, at room temperature) Mine crumbled a bit as I took them off the cookie sheet, but thankfully my taste testers are not so concerned with presentation as with taste. 



2 egg whites
(1/4 tsp lemon juice or cream of tartar)
3/4 c sugar
1 tsp vanilla
1 c chocolate chips

Warm the oven to 350.
Beat egg whites till stiff.  (fold in cream of tarter or lemon juice to help hold stiffness if desired)
Fold in sugar and vanilla.
Add chocolate chips

Drop by teaspoonful on parchment lined cookie sheet.  Turn oven off and bake 30-45 minutes.
