One of my favorite Christmas cookies. My grandma used to make them. They are so easy to make and delicious and a nice change from the standard cookie fare. They are a dry, shortbread-esque cinnamon cookie. They are nice to make with kids because its so easy and fun, and you get your hands dirty, plus it involves dunking the ends in sugar, who doesn't like to do that?
Cinnamon Pillows
1/2 lb butter, softened
2 1/2 c flour
1TBSP-ish almond extract (more if dough is dry and not holding together, or add extra water)
1 rounded tsp cinnamon
3 Tablespoons sugar plus extra for dunking
The dunking
ready to bake, they don't spread out too much so you can cram a bunch on the cookie sheet.
Work the dough with hands into a nice ball. Roll into a snake and then cut into 1 inch-ish pillows. Dip the ends in extra sugar and bake on ungreased cookie sheet at 325 for 5-10 minutes. The bigger the cookie the longer it takes to bake.
