Beery Chicken and Carrots

Not because I need a recipe, but because I need to remember this very simple idea for those weeks when I am just scraping by. 

2 lbs-ish chicken breast tenderloins
2 bottle beer (I used a porter)
7-8 carrots peeled and sliced.
1 tsp-ish season salt

Dump it all in the crock pot and cook on low 6 hours.

My older sister once told me that adding beer to the crockpot when cooking a roast makes the roast nice and tender. She was right. :) I usually throw in some carrots and onions (occasionally garlic), and it tastes great. When we don't have beer (we usually don't), I substitute wine. I am going to have to try this recipe. I never thought about adding beer to chicken. Thank you for sharing. I miss you.
