Turkey Salad with Pistachios and Grapes



Turkey Salad with Pistachios and Grapes
Prep: awhile
1.5 lbs roast turkey cut into cubes
4 celery stalks chopped
¾ cup grapes sliced in half
1/3 c shelled pistachios, roughly chopped
1/3 cup mayo
Salt and pepper
Pita pockets
Combine turkey, celery, grapes, pistachios mayo salt and pepper in large mixing bowl. Stir well to coat and refrigerate until ready to serve. Serve in pita pockets.


I feel like this takes awhile to make, because of opening and chopping the pistachios, and I buy turkey breast and cook it, since we are poor…but it is really really yummy, so we do make a few times a month in the summer months. And you can buy diced turkey breast at the deli, and that reduces the time a lot!
